The MBL8 Spicy Veggie Bean Burger

A bold, smoky, protein‑packed veggie burger made with lentils, black beans, mushrooms, peppers, and warming spices. Crispy on the outside, soft in the middle, and perfect for quick midweek cooking.

Ingredients: (adjust to taste)

• Cooked / softened lentils (1 cup)
(According to packet / tin instructions)
• Cooked / softened Black beans, (1 cup)
(According to packet or tin instructions)
• 1 Garlic clove crushed.
• Mushrooms, chopped (50g) (5-6ish)
• Slice of bread - turned into breadcrumbs.
• 1 small onion, diced - ½ red pepper, diced - 1 egg - Tomato purée (Knob) - Salt & pepper
• Mild chilli powder (1/2 tsp) - Paprika (1/2 tsp) - Smoked paprika (1/2 tsp) - Turmeric (½ tsp)
• Oil For Frying
Tip - (if mixture to wet, add additional breadcrumbs to firm up)

Method – (Food processor useful)

* Soak / Cook Lentils and black beans according to instructions, add the garlic to infuse in the water.
* Corsley chop the onion, mushrooms, and pepper.
* In the food processor, place sliced bread and turn to breadcrumb.
* Add the rest of the ingredients and blend. (do in batches if processor small & combine at the end if required)
* Place combined mixture in fridge for at least an hour to firm up
* Shape the burgers

* To Cook

* Pan fry in a little oil on medium heat for 4-5 minutes each side until crisp and golden.
Or bake at 200°C for 18–20 minutes for a healthier version.

* To Serve

* Load into buns with lettuce, tomato, sliced cheese, mayo, or a smoky chilli sauce.
* (or any of your favourite toppings)
